Menu Plan Monday

This week will be quick meals, I am not planning to make much from scratch unless it is super easy. We will be preparing our house to sell. Can you say 'ahhhhhhhh'.  Oh, and I will do my best to maintain really healthy meals as always!

Zatarains Jambalaya box mix veggie style
Green Salad

Thursday
Frozen Burritos w/ enchilada sauce
Corn
Brown Rice

Friday
Pizza night
veggie tray

Saturday
'Subway' sandwiches (fill ww french bread loaf w/ cut veggies, mustard & mayo)
chips

Sunday
Pasta Salad w/ grilled Vegetables I will probably grill on stovetop ahead of time and not use cheese at all!




Vegan Chik'n Parm


Easy Vegan Chik'n Parmesan


My husband either saw this somewhere or created it himself, not really sure, but it is really easy and fantastic!

Preheat oven to 425 degrees F.

One box Veggie Chicken pattys
Pasta or Marinara sauce
Italian Herbs
Vegan Parmesan (or regular)


Spray a pan or dish w/ nonstick spray, place in patties, (not touching each other) pour a little sauce on each one and top w/ herbs then cheese.  Thats it.

Rummage Sale Goodies!

I got some really great clothes today at a local church rummage sale.  I love rummage sales.  When I arrived I was disappointed by the look of the sale; there were heaps of clothing and odds and ends all over the place.  Once I finally found the baby table I was rewarded with some really great finds.  And boy did I have to dig for them!  What did I get?  3 pants, 2 sets of jammies, 1 set overalls,  3 shirts, one sweater, one pair of boots and a toy.  Some of these items she wont fit into for a year or so, but stocking up on baby clothes is like stocking up when cereal goes on sale; its just plain smart!

The boots were my best find, they are OshKosh and look like they have been worn once, the tread looks untouched! They are size 7 and who knows when they will fit, luckily here in Washington she can wear them any season as we always have random cool days.  When I went to pay for them the sweet older lady charged me 25 cents for them, I protested and told her she was not charging me enough.  She sternly told me 'I charge .25 for all shoes'.  Okay, I'll take 'em.  I think that was the first time I have ever tried to pay more for an item!!

My grand total for all this was $5.25.  A morning very well spent!

Consignment Shopping!

These wonderful clothing items I got for $52!!  My favorite childrens consignment shop had a 1/2 off sale on the 31st and I got a lot of great deals. I got 3 pairs of pants, 5 shirts/onsies,  1 romper, 1 dress, 1 sweatshirt,  3 pairs of jammies and 6 pairs of sox!

The clothing they carry is only of the highest quality and usually like new or even new.  I also got her some Robeez shoes and some great educational toys!!  We will be set for a while now!

Baked Tortilla Chips

Boy, I must have really missed blogging, or I just love to type!  I want to share my favorite low fat, and frugal snack with you all.  Baked tortilla chips.

How funny, the picture I found shows almost exactly what I do!!

Take a small stack of corn tortillas and cut in 4ths.  Spray both sides with a non-stick spray and salt lightly.  Bake at 400 degrees for about 10 minutes, keep a close eye on them, we want them to be light brown and no longer soft.

These are really good and hearty.  Great with salsa or any healthy dip.

Weigh-In Friday


Well, its another weigh-in Friday for me.  Since I had my daughter last November I have been trying (and sometimes not trying at all!) to loose all the 'baby' weight, as well as any extra weight I had gained prior.  To date I have 10.8 pounds to go to reach my goal.  With inspiration from Andreas Fat Burning Friday blogs, I will share my success and failures with you all.  Plus, it will give me that extra push I need to rid those 'last few', which as we know, are the HARDEST to loose.

I ate really healthy this week, with the exception of a few (yes, a few!!!) glasses of wine and even a small ice cream cone last night.  I did not work out one single time.  As I was on vacation last week and didnt weigh myself.  I was a little disappointed to see that I have a weight gain of 0.4 pounds from the past 2 weeks (including vacation of course).  Bad me.  I will work extra hard this week.  No wine and NO ice cream!

10.8 pounds to go


(oh, and if you really wanted to know, I have lost a total of 49.2 pounds so far.  Keep in mind I am 5'10'')
