Menu Plan Monday


Healthy, simple and vegan this week.  We need to be better about eating a little healthier.  I do believe I have put on a few pounds.  My husband thinks he has too!  How'd that happen??

Monday
Peanut Butter Sesame Noodles (Rachel Rays- I used to use this recipe I think...)
Steamed broccoli

Tuesday
Black Bean soup in the crock pot

Wednesday
Loaded Baked Potatoes (we skipped those last week)
canned chili and veg toppings


Thursday
thaw something from the freezer- carpet is being
installed today, Yippee!

Friday 
Pizza night (homemade and cheeseless)
veg or salad

Saturday
Make Spaghetti sauce in bulk- didn't use my gigantic
Costco tomato cans last week.  I'll then put this in jars and freeze!

Sunday
Leftover Black Bean soup
over rice
Green salad

groceries;
fresh cilantro
canned chili?

I might try the big can of sauce at costco as well. I have not purchased it before, but I like to make big batches of sauce ahead of time too. Did you know that you can add pumpkin purée to spaghetti sauce for added nutrition without changing the flavor? It helps to thicken it a bit as well.
If you like Albertsons brand canned chili it is still on sale until tomorrow for $1

Great menu...you are making me hungry. I will have to try the tofu sour cream recipe. It sounds good!!

Wow, carrot thyme breaks sounds wonderful. Can't wait to try it - and hear how it turns out! I had no idea you can put carrots into the bread machine - well that many at least! Actually it sounds like a great cookbook...I will have to check into this one! Thanks for the great ideas :)

I am new to your blog and just wanted to let you know that I just love your menu plan, it is so helpful to see what a vegetarian/vegan eats. I have just started to serve vegetarian meals to my family too, but I'm having a hard time finding good recipes. Do you have a favorite cookbook that you like to use? I look forward to reading your blog in the future.
